OOur Chef de Cuisine, Hendrikus G. Brune - whose culinary achievements in Gault Millau have been honored with fantastic 14 points for several years now - joins forces once again with his dedicated team to unite the classic and the creative. With passion and a lot of technical skill, he tries to prepare a dish so that in spite of all the finesse, the taste is in the foreground. Additional flavors should only support and emphasize it. To achieve that, we focus on a small menu of the dishes we are convinced of and try not to run after any fashion. But our concept goes far beyond these "basics": with us you know what you have on your plate and where it comes from.
Of course, for us, which is unfortunately no longer the case in gastronomy almost everywhere, the abandonment of ready-made Convenient products and flavor enhancers, as well as the use of exclusively fresh, high-quality and seasonal products.
We use almost exclusively products and ingredients from our own estate directly on the premises. Our farmers there work according to certified criteria, so that no environmental pollution occurs and the food is healthy and natural. Whether meat, vegetables or cheese - it comes direct from next door and not from the anonymous wholesale. The castle estate also has its own butchery and dairy where hearty cheese and sausage specialties are produced in traditional handcraft. A brick-walled bread oven, a cider-making plant, and soon a distillery and brewery make us a unique manufacturer of organic food. Enjoy and have a pleasant stay.
